The problem of biofilms in the Food and Beverage industry is not going to go away. In fact, the problem may only get worse. Biofilms can form on any surface that is exposed to nonsterile water or other liquids. This includes process lines, drains, and the internal surfaces of pipes. The biofilm acts as a shield which protects the organisms within that film, rendering them more resistant to heat and sanitizers. Further, since organisms within the biofilm are resistant, biofilm formation can pose a significant threat to food safety. If the biofilm contains pathogenic organisms, such as Salmonella or Listeria monocytogenes, the film can seed the food flowing by it with the pathogens.
